Raw Mango Fruit Pie

Hello!

So... I tried something similar to this recipe one day when I was roaming around Natures Food Patch and I absolutely fell in love with the taste and idea of this raw fruit pie! I wanted to recreated it, but I'm sure it's a little different than whatever their original recipe is for this delicious treat!


To start off, I used a food processor to make my raw pie crust :)

In the food processor Use your S blade (the large blade) and add:
*blend/ pulse until the crust makes a sticky ball consistency. No falkes here!

1/2 cup of Raw Organic Almonds
1 1/2 cups of pitted Organic Medjool Dates


I feel like this should be served in personal serving bowls like the one I have in the picture above. Only because the crust is sticky and is hard to serve as a pie in a pie tray, but if you want to be a rebel and do it that way make sure to line your pie tray with wax paper.
When you choose what you want to serve/ make your pie in take your pie crust and and evenly press onto your bowl/ tray/ whatever you will be using. * dip your fingers lightly in water so your crust doesn't stick to you. :)


And for the yummy and oh so simple filling!:
3 Organic Mangos
(I used a small knife to carve small chunks on the mango before slicing it off the seed)
2 bananas
& half of a handfull of shredded unsweetened coconut

Place all of the ingredients for the filling in a medium sized bowl and mash it together.
( I used a potatoe masher, lol.)

Fill your your pie crust with the mago filling and be sure to decorate your pie with some fresh fruit!
I placed some sliced strawberries, bananas, blueberries and sprinkled some more coconut on top to finish it up!

Two of my favorite salads this week!



Basically, these two salads are very similar :) I used a mixed variety of greens, herbs, avocados, and my orange dressing in both salads.  The only difference is that one has sundried tomatoes and the other has blueberries, chia seeds, and hemp seeds.  BOTH are delicious!  Next time I am going to cut the sundried tomatoes into smaller pieces though, the saltiness is a little overwhelming. When I get home today I will tell you exactly what greens and herbs are used in both salads because they came pre-mixed in a container when I bought em'.

Orange Dressing:
In a food processor add,
Oranges
Shallots
Garlic
Lime juice

SO EASY! and SO DELICIOUS!
 My mom loves it. ;)

P.s. I will figure out names for these babies asap!

I didn't freeze any fruit, so icecubes will do!

CooCoo for Coconuts!


Lately I have been drinking a ton of Coconut water, YUM! Natural energy full of vitamins, minerals, and nutrients, what's not to love?!

I mix coconut water with my juices + smoothies and when I have a coconut full of meat (like the one shown above), I add some of that good fat into my smoothies too!  I do not add coconut meat when I'm trying to keep my smoothies LOW in fat, but it is still sooo delicious!

Coconut water comes with anti-anging, energy boosting, hydrating, weight loss, and cardiovascular benefits. All in one!

Raw Sweet Kiwi


It's a delicious raw snack/ dessert!

Sweet Kiwi Recipe:

Crust
1/2 cup Organic Raw Almonds
1/4 cup Organic Milled Flax Seeds
1/2 cup Organic Raw Pumpkin Seeds
*to your liking, Raw Agave Nectar

Filling
3 Fresh Organic Kiwi
*to your liking, Raw Agave Nectar

*Note, I did not measure this recipe.. this one is kind of an, "up to how much you want" recipe. :)... I'm pretty sure that you will be able to tell how much of each ingredient you will actually need.


Directions: Add Almonds and Pumpkin seeds to a food processor. After chopping the two ingredients up, scoop into a medium bowl. Add milled flax seeds and enough agave for the crust to stick together. Stir/ mix.

In tiny bowls or,  if you want to get creative, in mini pie trays press the the mixture to form a crust.  Then add freshly cut kiwis and drizzle agave nectar to add to as a topping for shine and sweetness.

The Perfect Vegan Pancake!


Unlike your usual soggy box pancakes, these vegan babies have a great texture and are very light! You won't leave the breakfast table feeling heavy or too full! These seriously are, the Perfect Pancake! & soo yummy too! :)

The Perfect Vegan Pancake Recipe:


1 cup of King Arthur Organic Unbleached All-purpose Flour
1/4 cup of King Arthur Unbleached Cake Flour
2 tsp of Baking Powder
1 Pinch of salt
1 cup of water
1 Tbsp of Walnut Oil
2 Tbsp of Raw Agave Nectar
1 Tbsp of Vanilla Extract

*Maple Syrup to dress.


Directions: Sift all-purpose flour, cake flour, baking powder, and salt into a large bowl. Whisk water, oil, agave nectar, and vanilla extract together in a small bowl. In the center of your dry ingredients and pour in the wet. Stir until blended.

Heat a lightly oiled griddle over medium heat. Drop batter by ladlefuls onto the griddle, and cook until you see bubbles form all over the pancake. Flip, and cook until golden brown on the other side. Repeat. Makes about 8 pancakes.

The BEST Vegan/Vegetarian Peanut Butter Oat Cookies EVER!



These actually came out to be quite delicious!  Although, you may need a cup of soy milk at your side.

Vegan Peanut Butter Oat Cookie Recipe:

2 1/2 Bananas mashed
1/2 cup of Organic Crunchy Peanut Butter
1 2/3 cups of Gluten Free Oats
1 Tbsp of Vanilla Extract

Vegetarian twist; add REESES PIECES! (I made the reeses pieces version in the picture above)

Directions: Mash bananas in a medium sized bowl. I used a potato masher. Add peanut butter and vanilla extract. Mix thoroughly. Then add in your oats and mix once again! :)

Pre-heat oven at 350 degrees and bake for 18 minutes. Makes about about 20 cookies.

Everyday Green Juice!

I like to have this green juice Monday-Friday for lunch or dinner. I prefer mine to be sweet, this is the only way I can handle drinking it. >.<

Kale
Collards
Spinach
Cucumber
Pear
Apple
& Strawberries.

Make sure to try and drink your juice the day of, or right after you make it! The sooner the better :)
